What You Need
Ingredients (1–2 servings):
Chicken thighs
Garlic
Lemon
All Purpose Flour
Cornstarch
Soy Sauce
Sesame Oil
Mirin
Oil
Let’s Cook!
Marinade:
Soy sauce
Mirin
Sesame oil
(Optional: garlic + ginger)
How to Prep the Chicken:
Cut chicken into bite-sized cubes
Marinate for 30–60 mins (or as long as you’re patient)
Make two dredging piles: flour + cornstarch
Dredge in flour first, then cornstarch
Frying (Double Fry Method):
First fry: 320°F for ~90 seconds
Cool on a wire rack
Second fry: 400°F for 35–40 seconds
Let rest + taste test for doneness based on size
To Serve:
Squeeze lemon wedges over the top
Optional: serve with something pickled (like kimchi) to cut through the richness
