What You Need

Ingredients (1–2 servings):

  • Chicken thighs

  • Garlic

  • Lemon

  • All Purpose Flour

  • Cornstarch

  • Soy Sauce

  • Sesame Oil

  • Mirin

  • Oil

Marinade:

  • Soy sauce

  • Mirin

  • Sesame oil

  • (Optional: garlic + ginger)

How to Prep the Chicken:

  1. Cut chicken into bite-sized cubes

  2. Marinate for 30–60 mins (or as long as you’re patient)

  3. Make two dredging piles: flour + cornstarch

  4. Dredge in flour first, then cornstarch

Frying (Double Fry Method):

  1. First fry: 320°F for ~90 seconds

  2. Cool on a wire rack

  3. Second fry: 400°F for 35–40 seconds

  4. Let rest + taste test for doneness based on size

To Serve:

  • Squeeze lemon wedges over the top

  • Optional: serve with something pickled (like kimchi) to cut through the richness
