Nabe Hot Pot

What You Need
Ingredients (1–2 servings):
Napa cabbage
Thinly sliced pork belly or beef (I used frozen pork belly from an Asian grocery)
1 pack dashi broth (or water + instant dashi like Hondashi)
Shimeji or enoki mushrooms
Let’s Cook!
1. Layer cabbage + pork belly like a lasagna (3–4 layers).
2. Cut into sections and pack upright in a pot.
3. Pour in dashi (just enough to cover the bottom third).
4. Cover and simmer on medium for 10–20 min (mine took ~10, based on size of pot).
5. Serve with dipping sauce — ponzu or sesame are pretty common for this and hit
Dashi
Use instant dashi powder (like Hondashi) mixed with hot water — super easy and saves time.
You could make dashi the long way boiling the seaweed but I recommend just making it the fast way to save time and energy
My dipping sauce (hot pot restaurant style)
Mix:
– A spoon of peanut butter
– Soy sauce
– Dash of mirin
– Garlic (optional)
– Black pepper
– Pinch of salt or MSG
→ Add more peanut butter to thicken, more mirin or lemon juice to balance saltiness based on your preference !!
