Niku Tofu
Who said tofu can’t be packed with flavor?
What You Need
Ingredients (1–2 servings):
Firm tofu (or your preferred kind!)
Sliced beef
Half an onion, thinly sliced
Grated garlic
1 tbsp sugar
2 tbsp mirin
2.5 tbsp soy sauce
Pinch of dashi powder (I like Hondashi!)
Pinch of salt
1/2 cup water (add up to 3/4 cup more if you want to dilute the flavor)

Cube your tofu and thinly slice the onion.
In a cold pot, mix sugar + a splash of water. Turn heat to low and stir — it’ll start bubbling and lightly caramelize (don’t let it go too far!).
Add mirin and stir for 30 sec.
Add soy sauce + water and stir.
Add onions — if you want them soft, simmer them first before adding beef. If you like a little crunch, add beef at the same time.
Add tofu, gently spoon sauce over it for a minute. Done!
Tips
Let it sit on the stove a bit — the tofu soaks up more flavor over time, and it actually tastes better later. I always make extra for leftovers
