Scallops with Cauliflower Puree

What You Need
Ingredients (1–2 servings):
Scallops
Cauliflower
Olive Oil
Butter
Milk
Let’s Cook!
Cauliflower Purée
Cut ½ head of cauliflower into small chunks
Warm in a pan with a little butter — soften for ~3 min
Add milk until it comes about halfway up the cauliflower
Cook 3–4 more min until very soft
Purée while still hot — if it cools, it’ll turn clumpy
Scallops
(Pro tip: season from high up for even coverage)
Heat a pan with olive oil
Sear scallops for 2 min on one side
Flip and cook 90 sec more, then remove
Plating
Use a squeeze bottle to add dollops of purée
Place scallops on top
Finish with a little drizzle of olive oil — and enjoy :)
