Scallops with Cauliflower Puree

What You Need

Ingredients (1–2 servings):

  • Scallops

  • Cauliflower

  • Olive Oil

  • Butter

  • Milk


Let’s Cook!

 Cauliflower Purée

  1. Cut ½ head of cauliflower into small chunks

  2. Warm in a pan with a little butter — soften for ~3 min

  3. Add milk until it comes about halfway up the cauliflower

  4. Cook 3–4 more min until very soft

  5. Purée while still hot — if it cools, it’ll turn clumpy

Scallops
(Pro tip: season from high up for even coverage)

  1. Heat a pan with olive oil

  2. Sear scallops for 2 min on one side

  3. Flip and cook 90 sec more, then remove

Plating

  1. Use a squeeze bottle to add dollops of purée

  2. Place scallops on top

  3. Finish with a little drizzle of olive oil — and enjoy :)
